British and European cattle breeds are known for their tenderness, and cattle are known for their marbling properties. The name Wagyu refers"Wa" means Japanese and "gyu" means cattle, a Japanese breed derived from cattle native to Asia. Beef beef has a different flavor when cooked, which is due to the marbling (intramuscular fat) distributed in various muscles.

How is the marbling of beef graded?

Australian Beef AUS-MEAT grading on a scale of 0 (no visual marbling) to 9 (extensive visual marbling). The AUS-MEAT marbling system provides an indication of the amount of marbling in the beef. The MSA marbling system provides an additional indication of distribution fineness and marbling block size. The AUS-MEAT Marbling Evaluation System and the MSA Marbling Evaluation System can be used in coordination to provide more detailed information about the product. Various factors such as the age of the animal, diet (grain or herbivore), and the breed of animal can affect the level of marbling. In general, beef cut from the forequarters and loins of animals presented a different level of marbling than the buttocks cut from the hindquarters.
