The colorimetric plate for meat color determination is also called meat quality colorimetric card. The colorimetric plate shows that the meat color of pork chops is from 1 to 6. Arts and science are from 1 to 10.

Standard colorimetric plate technical parameters for determination of flesh color:
The flesh color scores of five cross-sections of eye muscles on the US NPPC colorimetric plate were arranged from light to dark for quantitative assessment of flesh color.
1 point = grayish white (abnormal flesh color)
2 = Mild gray (tendency to abnormal flesh color)
3 = normal bright red
4 points = slightly dark red (normal flesh color)
5 points = dark purple (abnormal flesh color)
1 divided into fatty traces;
2 points for fat trace;
3 in the amount of fat;
4 is divided into more fat;
5 is divided into excessive fat.
A 0.5 score is allowed between two points
